Lamm Mit Kardamom - Mutton Soup With Cardamom

Came to German for the first time in my life, i was being served lovely dinner by my in-laws Schirin and Marcus, such a lovely dinner event that is ended with Schi and Marcus played a great instruments that i even do not know the name, but the music is so perfect to wrap up such a lovely night.

That day all my homesickness ffelings were increasing into the top crescendo until i realise it again, distance and time are the meazurements that human created to name some things that is actually nisbi in real because we are still having those feeling toward people that we love. And those are no boundaries and no constrictions for them.

And upon realising it again, i fall in love to their menu, Lamm Mit Kardamom. Here we go my Lovelies....

Ingredients A
Grind these ingredients
Green Cardamom 1 spoonfull
Pepper 1/2 teaspoon
 Black pepper 1/2 teaspoon

Grind together these ingredients
Paprika powder (red eye chilli) as You like
Corriander 1/2 teaspoon
Curcuma 1/2 teaspoon

Brownies Goey Cappucino

Due to the event in NCC - NCCBrowniesWeek, i brave myself to try in making this delicious dessert. Actually i ever made this cake ages ago when i was still a student and learnt to bake a cake. It was easy for me at that time, dunno why. And i was serving it with a dollop of vanilla fla hmmm. But after some years i get so rusty in baking, so bismillah here it goes my lovelies...Brownies Goey Cappucino.

Ingredients
For Brownies
 2 eggs
10 spoonfulls (high) of castor sugar
200 gr melted chocolate peppermint bar with 1 spoonfull of butter
50 gr chocolatte bar cut into small dices
10 spoonfulls (high) of flour
3 spoonfulls of cocoa powder
1/4 teaspoon of salt
3 spoonfulls of cappucino powder
3 spoonfulls of cooking oil
1 handfull of peanut for topping

 For Filling
1 egg beat lightly
6 spoonfulls of butter in a room's temperature
6 spoonfulls of castor sugar
10 spoonfulls of flour
2 spoonfulls of cappucino powder


How to
Make the Filling
1. Mix the butter and sugar with Your spatula, then add the egg, coffe and the last put the flour.
2. Mix nicely the dough and refrigerate it for 30 minutes before using it.

Make the Brownies
1. In a bowl put the butter and sugar then use Your mixer to mix them with the lowest speed for 2 minutes.
2. Then add the eggs into the mixture, again mix with the mixer. Put the melted chocolate bar into the bowl. Turn on the mixer to make the dough mixed well. Then add the flour, cappucino, salt and cocoa powder. Mix using Your spatula. Dont forget to pour the chocolatte bar into the batter. Then lastly put 3 spoonfulls of oil to make the dough a little bit goey.
3. Heat the oven until it is pinged. Then pour half of the brownies in a square cooking pan that has a greasy paper on it , top it with all the filling dough, then add the half portion of the brownies dough. The consistency of the dough will be a little bit stiff but it is okay..You dont want to ruin the cake into a lump, so just let it be. Then top it with the peanuts.
4. Bake the dough for 35 minutes in 125 degree. Check by inserting a toothpick for doneness. Wait until it is cool for about 30 minutes before You can start to dig in or cut it. Its just so goey that it melt in Your mouth lovey. Happy baking.

Canales - A French Snack

This lil moresel i found accidently from browsing in Youtube, https://www.youtube.com/watch?v=Qixe-mv6-lU and oh my God i fall in love with the show that Diane DeLafuente hosts. She made this cooking so simple and how she is eating it makes me want to try the cake also. Sooo here we go my lovelies, i have changed some of it based on my survival mode kitchen.

Ingredients
32 spoonfulls of Milk
3 spoonfulls of butter cut into small pieces
2 eggs
2 yolks
13 spoonfulls of sugar
1 teaspoon of vanilli/Nutmeg or 1/4 cup of rhum
13 spoonfulls of flour



How to
1. Simmer the butter with the milk untill You cant see the butter. And turn off the stove then put it down to wait till it lukewarm.
 

2. In a big bowl with a lid, put the sugar, eggs, vanilla/nutmeg/rhum, flour and whisk them before You pour the lukewarm milk. Mix nicely.
3. Close the lid of the bowl and save it inside the refrigerator for 1 night.
4. After 1 night, do mix it again with a whisk and pour in the muffin / poffertjes/ canales pan that has been greased with butter before.



5. Heat the oven until it pings, then put the pan
inside with 150 degree for 10 minutes. Then turn down the heat into 125 degree and cook it for 35-40 minutes or until the cake is brown.

 

6. The cake does look sooooo overcooked from the outside, but believe me, like what Diane said, You do want them to be crusty brown on the outside for the inside will always be softie...hmmm yummy. Happy baking my lovelies...

Kue Lumpur - A Traditional Potatoe Cake From Indonesia

This cake has a big chance to be succeed in making rather than other Indonesian desserts. The texture is soggy, soft and moist in the toungue when You eat it. Here is my recipe that has been been through a modification in making and baking it.
And yes it is ano cake which You do not need a mixer my lovelies *winks*

Kue Lumpur

KUE LUMPUR
Prep and cooking time - 75 minutes
Serving for 6 people

Ingredients:
A
200 ml Water
5 spoonfulls of unsalted butter

B
10 spoonfulls of Flour
3 potatoes, cut them into small dice, boil and mash them nicely
10 spoonfulls of Brown sugar (more if You like sweeter taste)
1/4 teaspoon of salt
2 eggs beat lightly
350 ml milk or coconut milk (i use both of them and mix it)

Topping
12 dates cut into dices and roll them into a pinch of flour so they wont stick to each other



How to
1. Boil the A ingredients together until the butter dissolved. Turn off the stove and cool it off.

The cooling pot with butter and water in it, add the flour now.



2. When it is cool, then put the flour, potatoes, brown sugar, and salt.

Put every dry ingredients in it.
3. When it is mixed then add the egg one by one. The last step is pouring the milk / coconut milk into the batter. The consistency will be sooo light. Its okay my lovelies, that is what we want to have. Pour the batter into the pan that has been greased or cover with greasy paper. Sprinkle the dates evenly on the top of it.
4. Heat Your oven in 150 degree until it pings and turn it low until 125 degree to bake the dough until 30-35 minutes or whenever Your stick comes clean after You check the cake. Take it out from the oven and let it cool. The textur of the cake is so heavenly smooth and smell so nice because of the coonut milk and potatos.

Notes
* As You can see my lovelies, we can also steam it in Your rice cooker just like when You cook rice.
* For vegan You can skip the egg and change that with 5 spoons of melted butter and buttermilk 1/2 cup, and reduce the number of the water in the recipe from 200 ml into 100 ml. Happy baking my lovelies...spread the nice home cooking to all the people You love.







Banana Cake Nutella

This is ano recipe without using mixer...hmmm i am a lil bit afraid of holding mixer due to the vibrations lol...so here it is my lovelies. The real recipes i modify are from Nia NCC group and Ida de Mesteer NCC.

Banana Cake Nutella
Serving 6 people
Time cooking 80 minutes



Main Ingredients:
 20 spoons of Flour
1-3 mashed banana put aside for 10-15 minutes before using it to get the texture and color
14 spoonfulls of Caster sugar(more if You like sweeter taste)
1 teaspoon of Baking powder
1/4 teaspoon of Baking soda
3 spoonfulls of Milk
1/2 teaspoon of Vanilla or Cinnamon powder (I skip it)
140 ml melted butter (unsalted) / olive oil
1 egg whisk lightly
1/4 teaspoon of Salt
3 spoonfulls of milk

Additional Ingredients:
 3 spoonfulls of grated coconut
3 spoonfulls of oatmeal
3 spoonfulls of grated carrot
3 spoonfulls of dry fried peanuts that has been chopped (any kind is good)

Topping Ingredients:
2 high spoonfulls of Nutella mixed with 1 spoon of warm water

How to:
1. Mix all the dry ingredients from the main ingredients, start with flour, baking powder, baking soda, salt, sugar, vanilla/cinnamon, and banana.
2. Mix them with Your spatula till it is mixed nicely. Then add the milk after the egg. The consistency will be heavy, it is okay. The last put the melted butter/oil and stir slowly until it is mixed.
3. Take Your pan and grease it with butter or just lay a greasy paper on it. Mine is 25x21, You can also use the muffin pan, it works beautifully also. Just dont forget to grease or put the greasy pans lovelies.
4. Turn on Your oven 150 degree till it pings, then lower it for about 135 degree.
5. Pour the batter into the pan and put Nutella for the topping, dont forget to make a swirl with a stick on top of Your cake lovelies, yes just like a swirly waves.
6. Bake it for about 35-40 minutes. But do make a cut from one side to the other side to release the air, so Your cake wont burst up. Make the cut when the cooking is about 15 minutes (when the cake is still lumpy) or You can do it when the cake is starting to be toughen up (20 minutes of cooking).
7. Cut when it is cool but dont let it cold too long for the nutella crut might be difficult to cut. Happy baking....

Notes
* For a vegan, just skip the egg, replace it with another 4 spoons of milk will also work.
* I skipp the vanilla or cinnamon due to the strong aroma of banana, i wont ruin that lovely smell my lovelies.....especially after baking it.

Pudding Sutra - Silky Pudding

This pudding used to be something that i always drooled whenever i went to a bakery shop. Why did i drool? Well besides for the obvious reason of very delicious appearance that i believe is not deceiving on this case, but mostly because of the price. For a small cup of it, the price is always exorbitantly expensive compare to other snacks. So therefore the drooling expie was happening. Until one day one of my cousins made this lovely pudding for meeeeee *scream and shout happily*

And in fact it is very easy to be made and simple. Lets take out the apron my lovelies.....

Ingredients:
1 Can of condensed milk
5-6 cans of water (using the can of the milk)
Sugar as You want to (or just follow the numbers that has been mentioned on the package of the agar-agar)*
1 pack of Agar-agar(**
A bottle of squash syrup
Mandarin Orange or other fruits

How To:
1. Boil 1 can of milk with the water. And put the sugar and 1 pack of Agar-agar  also(***. Cook in average fire. Wait until its boiling but do not let it flow out from the pan.
2. When it is done, pour number 1 into small cups that we have prepared. Let the pudding hard and then for each cup pour 1 spoon of the syrup and the fruit on top of it. Walaaaaa You get my lovely pudding

Oseng Kangkung or Saute Water Spinach



As much as i love to cook and enslaved myself in creating something but there is this sacred rule that i always withhold  whenever i go to kitchen. And it is already like a dogma for nee lol. I do not like to cook something that is ridiculously wasting a lot of time, energies, power etc. Food should be healthy for body, mind and soul not only for the eaters but also for the cook. So i always like to cook and eat something that is effortless in creating them. Somehow i feel cruel if i eat a food that has been made with a lot of effort. Remember wasting time is something in which Islam forbid,and i do not say cooking for hours is bad, just not my style.

Ingredients

1 bunch of Water spinach chop and separate the stems and the leaves
1 bunch of baby kailan chop

Saute
====
1 leek to bechopped
