This cake has a big chance to be succeed in making rather than other Indonesian desserts. The texture is soggy, soft and moist in the toungue when You eat it. Here is my recipe that has been been through a modification in making and baking it.
And yes it is ano cake which You do not need a mixer my lovelies *winks*
KUE LUMPUR
Prep and cooking time - 75 minutes
Serving for 6 people
Ingredients:
A
200 ml Water
5 spoonfulls of unsalted butter
B
10 spoonfulls of Flour
3 potatoes, cut them into small dice, boil and mash them nicely
10 spoonfulls of Brown sugar (more if You like sweeter taste)
1/4 teaspoon of salt
2 eggs beat lightly
350 ml milk or coconut milk (i use both of them and mix it)
Topping
12 dates cut into dices and roll them into a pinch of flour so they wont stick to each other
How to
1. Boil the A ingredients together until the butter dissolved. Turn off the stove and cool it off.
2. When it is cool, then put the flour, potatoes, brown sugar, and salt.
3. When it is mixed then add the egg one by one. The last step is pouring the milk / coconut milk into the batter. The consistency will be sooo light. Its okay my lovelies, that is what we want to have. Pour the batter into the pan that has been greased or cover with greasy paper. Sprinkle the dates evenly on the top of it.
4. Heat Your oven in 150 degree until it pings and turn it low until 125 degree to bake the dough until 30-35 minutes or whenever Your stick comes clean after You check the cake. Take it out from the oven and let it cool. The textur of the cake is so heavenly smooth and smell so nice because of the coonut milk and potatos.
Notes
* As You can see my lovelies, we can also steam it in Your rice cooker just like when You cook rice.
* For vegan You can skip the egg and change that with 5 spoons of melted butter and buttermilk 1/2 cup, and reduce the number of the water in the recipe from 200 ml into 100 ml. Happy baking my lovelies...spread the nice home cooking to all the people You love.
